Multi-Bean Soup

  1. Wash beans thoroughly and place in large bowl covered with water.
  2. Cover and soak overnight; drain.
  3. Place ham hocks in Dutch oven; add water, garlic, thyme and red pepper.
  4. Bring to a boil. Cover and reduce heat.
  5. Simmer hocks for 1 1/2 hours.
  6. Add beans and continue cooking for another hour.
  7. Add remaining ingredients and cook for 30 minutes more
  8. or until beans and vegetables are done.
  9. Yields 10 servings.
