Asparagus Frittata Recipe Ursolina
- 1 lb. asparagus, trimmed
- 2 eggs
- olive oil spray
- Bread off hard part of asparagus and discard.
- Wash well with cold water.
- Cook asparagus in boiling water for about five minutes, depending on size.
- drain and set aside.
- Beat eggs in bowl and add asparagus.
- Season with salt and pepper if desired.
- Coat pan with spray and heat.
- Add asparagus a few at a time.
- Brown on one side then turn over and brown on other side.
