Peter's Irish Whisky Cake
- 1 pkg. (1-1/8 lb.) yellow cake mix
- 1 pkg. (3 oz.) vanilla instant pudding
- 1/2 cup ice water
- 3/4 cup coarsely chopped walnuts
- 4 eggs
- 1/2 cup Irish whisky
- 1/2 cup vegetable oil
- 1/4 cup butter
- 1/2 cup granulated white sugar
- 1/3 cup water
- 1/4 cup Irish Whisky
- Preheat oven to 325 degrees F. Grease 1 bundt or tube pan.
- Blend all the cake ingredients in a large mixing bowl.
- Beat until well blended.
- Pour batter into pan.
- Bake for 1 hour.
- Set on wire rack to cool.
- When cool, glaze with the following mixture.
- Whisky Glaze: Melt butter in saucepan.
- Stir in sugar and water.
- Boil for 3 minutes, stirring constantly.
- Remove from heat and stir in the second measure of Irish whisky.
- Pour over unmolded cake.
