Carnitas
- 6 (10 inch) flour tortillas
- 1 lb beef flank steak (cut into thin strips)
- 3 tablespoons Worcestershire sauce
- 14-12 teaspoon hot pepper sauce
- 2 -3 minced garlic cloves
- 2 medium baking potatoes, cut into 1/2 inch cubes
- 1 lb fresh mushrooms, sliced
- 1 medium onion, chopped
- 34 cup shredded cheddar cheese
- salsa
- Heat tortillas as package indicates.
- In a medium bowl, combine steak, Worcestershire, hot pepper sauce and garlic.
- Mix well.
- Heat a non stick dutch oven on medium high till hot.
- Add the meat mixture and cook and stir for 3 to 4 minutes until browned.
- Add potatoes and onions.
- Cook for 1 minute.
- Reduce heat; and simmer for about 12 to 15 minutes or until potatoes are tender.
- Spoon mixture evenly down the center of each warm tortilla.
- Sprinkle with cheese: roll up.
- Serve with salsa.
