Vegetarian Fajitas
- 3 yellow peppers, washed and sliced
- 2 -3 red onions, sliced
- 1 -2 garlic clove, finely chopped
- 2 cups grape tomatoes
- 1 cup mushroom, with stems removed, sliced
- 2 tablespoons olive oil
- 1 (1 1/4 ounce) package fajita seasoning mix
- 1 package of 12 flour tortilla
- 1 (16 ounce) can refried beans
- Preheat oven to 375.
- Layer first 7 ingredients in a 13 by 9 " pan.
- Roast at 375 in oven for 45 to 60 minutes, depending on how you "done" you prefer your vegetables to be.
- Stir occasionally throughout cooking time.
- Heat refried beans or black beans in a microwave.
- Place desired amount of beans on tortilla shell and top with vegetables.
