Vegetarian Fajitas

  1. Preheat oven to 375.
  2. Layer first 7 ingredients in a 13 by 9 " pan.
  3. Roast at 375 in oven for 45 to 60 minutes, depending on how you "done" you prefer your vegetables to be.
  4. Stir occasionally throughout cooking time.
  5. Heat refried beans or black beans in a microwave.
  6. Place desired amount of beans on tortilla shell and top with vegetables.
