AMIEs Coconut-coated EGG Nuggets

  1. Place the milk and egg yolks in a double boiler and cook for 3 minutes until syrupy.
  2. Add the wafers, stirring continously, until the mixture thickens enough to shape into balls.
  3. Remove from the heat and let it cool.
  4. Shape about 1/2 or 1tablespoon of the mixture into a ball and roll it into the coconut flakes, rolling well to coat evenly.
  5. Repeat to form the rest of the egg nuggets.
  6. Served cooled in a small serving dish.
