AMIEs Coconut-coated EGG Nuggets
- 375 ml condensed milk
- 6 egg yolks
- 6 tbsp wafers (ground)
- 1 finely shredded coconut flakes
- Place the milk and egg yolks in a double boiler and cook for 3 minutes until syrupy.
- Add the wafers, stirring continously, until the mixture thickens enough to shape into balls.
- Remove from the heat and let it cool.
- Shape about 1/2 or 1tablespoon of the mixture into a ball and roll it into the coconut flakes, rolling well to coat evenly.
- Repeat to form the rest of the egg nuggets.
- Served cooled in a small serving dish.
