Sarasota's Easy Mexican Cheesy Sloppy Joes
- 1 lb ground turkey
- 1 cup salsa (I use medium or hot, but use any heat level you like)
- 1 (11 ounce) can campbell's tomato soup
- 1 teaspoon cumin
- 1 cup monterey jack pepper cheese, grated
- 1 medium onion, very thin sliced
- 1 teaspoon olive oil
- Turkey -- In a medium sauce pan, add the olive oil and bring to medium high heat.
- Add the turkey and cook breaking it up as you go until it is no longer pink.
- Add the soup, salsa and cook on medium to medium low, simmering, and let the liquid reduce slightly.
- About 10-15 minutes.
- Onions -- Just slice and set to the side, break up the slices slightly.
- Rolls -- Toast the rolls either on a grill, under the broiler or in the oven, whatever works best for you.
- Sandwich -- On the bottom roll, add the onion slices, then the sloppy joe meat, then cheese and the top roll.
- ENJOY!
