Sensational Irish Cream Cheesecake

  1. Heat oven to 375F.
  2. Lightly grease 9-inch springform pan.
  3. Stir together all crust ingredients in bowl until mixture resembles coarse crumbs.
  4. Press onto bottom and 1 inch up sides of prepared pan; set aside.
  5. Combine sugar and cream cheese in bowl.
  6. Beat at medium speed until creamy.
  7. Continue beating, adding 1 egg at a time, until well mixed.
  8. Do not overbeat.
  9. Stir in liqueur.
  10. Combine 1/2 cup chocolate chips and flour in bowl; gently stir into cream cheese mixture.
  11. Pour filling into crust.
  12. Sprinkle remaining chocolate chips over batter.
  13. Bake 40-45 minutes or until center is set and firm to touch.
  14. (Cheesecake surface may be slightly cracked.)
  15. Cool 10 minutes.
  16. Loosen side of cheesecake by running knife around inside of pan.
  17. Cover; refrigerate at least 3 hours.
  18. Garnish with whipped cream and top with chocolate curls, if desired.
  19. Variation:
  20. Sensational Mocha Cheesecake.
  21. Prepare cheesecake as directed above substituting 1/4 cup Land O Lakes Half & Half or milk, 2 tablespoons cooled coffee and 1 teaspoon almond extract for 1/3 to 1/2 cup Irish cream liqueur.
