Aussie Lime Pie Recipe

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Lightly grease a 9 inch glass pie pan.
  3. In a medium bowl, mix together oats, coconut, flour, and sugar.
  4. In a separate bowl, mix together melted butter or possibly margarine, corn syrup, and baking soda till frothy.
  5. Add in corn syrup mix to oat mix and stir till ingredients are thoroughly combined.
  6. Press mix proportionately into bottom and sides of pie pan.
  7. In a medium mixing bowl, combine condensed lowfat milk, lime juice, egg yolks, and lemon rind.
  8. Beat on medium speed 1 minute.
  9. Pour mix into pie crust.
  10. Bake in preheated oven for 20 min, till hard in center.
  11. Don't allow to brown on top.
  12. Refrigeratebefore serving.
  13. Easy lime pie with ANZAC cookie crust.
