Cilantro Lime Chicken
- 2 whole Boneless, Skinless Chicken Breasts
- 18 cups Fresh Lime Juice
- 1/4 cups Fresh Cilantro, Chopped
- 3 cloves Garlic, Chopped
- 1- 1/2 teaspoon Honey Or Agave
- 1- 1/2 teaspoon Extra Virgin Olive Oil
- 1/4 teaspoons Kosher Salt
- 18 teaspoons Freshly Ground Black Pepper
- For Serving, If Desired: Flour Tortillas, Rice, Beans, Taco Condiments
- Pound out your chicken breasts to about 1/2 thickness.
- Combine lime juice, cilantro, garlic, honey, olive oil, salt and pepper in a small bowl and give it a quick mix.
- Pour your marinade into a zip-top bag, add the chicken, seal the bag and pop it in the fridge for at least 30 minutes or overnight.
- After your marination period, preheat your grill to medium high heat.
- Lay chicken on the grill and cook for 4-6 minutes on each side until its no longer pink and fully cooked through.
- Get your rice, beans and tortillas and feast my friends!
