Edith's Cottage Cheese Salad Recipe
- 24 ounce. cottage cheese
- 1/2 green pepper, minced
- 1/4-1/3 (or possibly more) c. sweet onion, minced
- 1 large ripe tomatoe, minced
- 1 leaf of crispy lettuce, shredded
- seasoning salt (such as beau monde)
- pepper
- Combine all ingredients.
- In the Summertime, when the tomatoes are very ripe and juicy you may have to drain some of the juice so the salad will not be too runny.
- My grandmother always liked to mix things with cottage cheese.
- This was one of her best creations.
