Chicken Breasts Primavera
- 6 chicken breast halves, skinned, boned and slightly flattened
- salt and pepper
- red pepper strips
- 1 c. frozen cut green beans or asparagus
- 1 (6 oz.) pkg. frozen snow peas
- 3 green onions, cut into 1/2-inch pieces diagonally
- 6 Tbsp. margarine, cut in small pieces
- 6 Tbsp. grated Parmesan
- Heat oven to 400u0b0.
- Have a jelly roll pan ready.
- Tear six 14 x 12-inch strips of foil.
- Lightly coat 1 side with vegetable spray or oil.
- Place chicken breast half on each piece. Sprinkle with salt and pepper. Top with some of the pepper strips, green beans (or asparagus), snow peas and green onions.
- Dot with margarine; sprinkle with cheese.
- Fold foil and seal securely. Arrange packets on ungreased baking sheet. Bake 18 to 20 minutes until chicken is done.
- Remove packets to plates.
- Serve with green salad, crusty Italian bread, ice cream and peaches.
- Serves 6.
