Apple Butter Scones

  1. Preheat oven to 425 degrees F.
  2. In a large bowl combine flour, sugar, baking powder and baking soda.
  3. Cut in butter or margarine with pastry cutter or fork until mixture resembles coarse crumbs.
  4. Add raisins.
  5. In a separate bowl combine apple butter and egg.
  6. Add flour mixture, stirring j ust until dry ingredients are moistened.
  7. Spray 2 1/2 inch muffin tins with vegetable cooking spray.
  8. Fill almost full wi th batter.
  9. Bake at 425 degrees F for 14 to 16 minutes or until lightly browned.
  10. Cool slightly.
  11. Serve warm with additional apple butter.
