Japanese Daikon Carrot Salad

  1. Toss radish, carrot and salt together in large bowl.
  2. Let stand for 10 minutes.
  3. Knead until soft.
  4. Squeeze dry.
  5. Combine rice vinegar and sugar in small cup.
  6. Stir until sugar is dissolved.
  7. Pour over radish mixture.
  8. Toss until well coated.
  9. Sprinkle with sesame seeds.
  10. Makes 2 cups.
