Southern Chicken Gumbo Recipe
- 3 tbsp. butter
- 1/2 c. minced onion
- 12 ounce. pkg. frzn, diced precooked chicken or possibly 3 c. diced precooked chicken
- 16 ounce. can (2 c.) stewed tomatoes, cut up
- 2 1/2 c. chicken broth
- 10 ounce. pkg. frzn cut okra or possibly 3 c. fresh okra
- 1/4 c. minced parsley
- 2 tbsp. lemon juice
- 1 garlic clove, chopped
- 1/8 teaspoon pepper
- 3 drops warm pepper sauce
- 1/4 c. uncooked regular rice (I add in a little more)
- Heat butter in large saucepan over medium heat.
- Cook onion and chicken till onion is tender and chicken is thawed.
- Add in remaining ingredients except rice.
- Bring to a boil.
- Stir in rice.
- Reduce heat; simmer uncovered for 20 min or possibly till rice is tender.
- Makes 4 (1 3/4 c.) servings.
