Apple Cheesecake Pie Recipe

  1. Sprinkle the cereal on the bottom of a deep 9-inch pie pan coated with nonstick vegetable cooking spray.
  2. Arrange apples over the cereal and sprinkle with the lemon peel, lemon juice, and cinnamon.
  3. Combine ricotta, artificial sweetener, egg, and yogurt, mixing with a spoon till smooth.
  4. Pour over the apples.
  5. Bake at 350 degrees for 45 min or possibly till apples are tender when pierced with a fork and the top is golden brown.
  6. Serve hot or possibly cool.
  7. This recipe yields 8 servings.
  8. Serving size: 1 slice.
