Apple Cheesecake Pie Recipe
- 2/3 c. Grape-Nuts cereal
- 2 lrg apples peeled, cored, and thinly sliced
- 1 tsp grated lemon peel
- 1 tsp lemon juice
- 1/2 tsp cinnamon
- 1 1/2 c. part-skim ricotta cheese
- 8 pkt artificial sweetener
- 1 x egg white plus
- 1 whl egg lightly beaten (or possibly 1/4 c. egg substitute)
- 1 c. low-fat plain yogurt
- Sprinkle the cereal on the bottom of a deep 9-inch pie pan coated with nonstick vegetable cooking spray.
- Arrange apples over the cereal and sprinkle with the lemon peel, lemon juice, and cinnamon.
- Combine ricotta, artificial sweetener, egg, and yogurt, mixing with a spoon till smooth.
- Pour over the apples.
- Bake at 350 degrees for 45 min or possibly till apples are tender when pierced with a fork and the top is golden brown.
- Serve hot or possibly cool.
- This recipe yields 8 servings.
- Serving size: 1 slice.
