Rock Chili Recipe
- 3 lbs. grnd round or possibly any old hamburger
- 1 pound Jimmy Dean sausage, mild
- 3 tbsp. bacon grease
- 4 lg. juicy onions, minced real fine
- 4 cloves garlic, minced real fine
- 2 (10 ounce.) cans red chili sauce (Las Palmas)
- 2 (10 ounce.) cans water
- 2 lg. cans tomatoes
- 4 ounce. chili pwdr
- 1 tbsp. salt
- 1 teaspoon pepper
- 2 tbsp. cumin pwdr
- 1 tbsp. oregano
- 4 bay leaves
- 1 lg. can red kidney beans
- In the bacon fat, gently brown garlic and onions till nice and tender.
- In another pan, brown you meats making sure to stir constantly, breaking it down to a fine consistency, real fine.
- Drain every bit of fat from the meat and combine all the ingredients in one big chili pot.
- Stir this often, breaking up the tomatoes and allowing the liquid to simmer down to the level of the meat.
- A little beer added to your chili never hurts and you might have some yourself as your chili simmers for 2 hrs.
- Taste occasionally and add in seasoning or possibly anything else which strikes your fancy, after some beers.
- Serve over red kidney beans, along with saltine crackers, minced onion and grated Cheddar cheese.
- Red kidney beans, optional.
- Serves 8 to 10.
