Fast and Easy Twice Baked Potatoes
- 4 large baking potatoes
- 2 tbsp cream
- 1/4 cup sour cream
- 3 tbsp soft, real butter
- 1 cup freshly shredded parmesan cheese
- 4 slice cooked bacon, chopped fine
- 1 tbsp minced onion
- 1 slices of a nice, sharp cheese. i like to use sharp cheddar or swiss.
- Clean and cook potatoes in your microwave according to it's settings for potatoes
- Slice off top of potato so that you can spoon out the pulp of it into a large bowl.
- Be careful not to break the skins, set hollowed out skins aside.
- (Use a hot pad as your potatoes will be hot.)
- It's important to mix ingredients into hot potatoes unless you want them lumpy.
- Mash potatoes.
- Then add your ingredients one at a time, ( except the sliced cheese) in order of list, mixing thoroughly after each addition.
- Spoon prepared potatoes back into skins, adding sliced cheese on top.
- Grill potatoes on a hot grill over indirect heat until hot throughout and cheese has melted.
- These are so tasty and fast!
