Cornbread-Vegetable Supper
- 1 box cornbread mix
- 1 can (8) creamed corn
- 1 lg. egg
- 1/4 cup milk
- 1/4 cup vegetable oil
- 1 lb. ground beef
- 1 lg. onion, chopped
- 1 can (14-1/2 oz.) green beans, drained
- 1 can rotel tomatoes
- 8 oz. shredded cheddar cheese
- Mix cornbread mix, corn, egg, milk and oil.
- Bake at 425F for 20 minutes.
- Meanwhile, cook ground beef and onion in a large skillet; drain well.
- Stir in green beans and tomatoes.
- Cook over medium heat stirring often, until heated.
- Spoon over cornbread; sprinkle with cheese.
- Bake at 425F for 10 minutes.
