Quick Oyster Pickup
- 12 ounces oysters fresh or frozen
- 2 cups oyster liqueur and water
- 1 each soup, cream of leek, mix 1 3/4 oz package
- 1 cup milk
- 1 tablespoon parsley leaves fresh, chopped
- Thaw frozen oysters.
- Drain oysters, reserving liquor.
- Add oyster liquor and water to soup mix and bring to a boil, stirring constantly.
- Reduce heat, stirring occasionally.
- Add oysters and heat 3 to 5 minutes longer or until edges of oysters begin to curl.
- Sprinkle with parsley.
- Serves 6.
- Note: Approximately 65 calories per serving.
