Salsa De Verdad

  1. Finely chop the red onion, bell pepper, coriander, tomatoes, chillies, and garlic, and mix together with a fork in a large bowl.
  2. Finish with plenty of lime juice and, if you like, some extra virgin olive oil.
  3. Serve with corn chips, or in tacos, enchiladas, nachos, tortilla wraps, or in other Mexican dishes.
