BBQ Potatoes and Onions
- 4 large potatoes, cut into cubes
- 2 medium onions, peeled and sliced
- 2 medium bell peppers, cut into stips (or 1 inch cubes if desired)
- 1 cup barbecue sauce (hickory flavor)
- 2 -3 garlic cloves, minced
- 14 teaspoon Tabasco sauce (or more if desired)
- 2 sheets aluminum foil (12 X 18 inch)
- nonstick cooking spray
- Preheat grill to medium-high heat.
- Lightly spray one side of the foil sheets with non-stick cooking spray.
- Combine all other ingredients in a large bowl, stir to coat.
- Transfer ingredients to the sprayed side of one sheet of foil, place the other sheet of foil, sprayed side down, on top of the veggies and create a packet by folding and crimping edges tightly to seal.
- Place packet on the grill and cover with grill lid.
- Cook about 20 minutes or until potatoes are tender, be sure to turn packet over about halfway through cooking .
