Chocolate Eclair Pudding Cake Recipe
- 1 box graham crackers
- 2 sm. boxes French vanilla pudding
- 3 c. whole lowfat milk
- 8 ounce. whipped topping
- Line bottom of a 9 x 13 inch pan with one third of the graham crackers.
- Mix the dry pudding mix with lowfat milk till set.
- Add in whipped topping and mix together.
- Pour half of the pudding mix over crackers.
- Add in another layer of crackers and pour rest of pudding on top.
- Top with remaining crackers and ice with following recipe:
- Mix butter, cocoa and lowfat milk.
- Bring to a boil and remove from heat.
- Add in powdered sugar.
- Mix.
- Spread over top layer of graham crackers in above recipe.
