Blueberry Orange Salad

  1. Bring orange juice to boil in a saucepan over medium heat.
  2. Remove from heat; add gelatin, sugar and lemon zest.
  3. Stir until gelatin is dissolved.
  4. Chill until mixture is the consistency of unbeaten egg whites.
  5. Stir in buttermilk; mix well.
  6. Fold in blueberries; pour into an oiled 6-cup mold.
  7. Refrigerate until set.
  8. Unmold onto lettuce leaves.
