Mini Spinach-Artichoke Frittatas
- 6 eggs
- 3/4 cup KRAFT Grated Parmesan Cheese
- 1/4 cup MIRACLE WHIP Dressing Family Dollar $3.50 thru 02/07
- 1 Tbsp. flour
- 1 Tbsp. Dijon mustard
- 1/2 tsp. ground black pepper
- 1 can (14 oz.) artichoke hearts, drained, chopped
- 1 pkg. (10 oz.) frozen chopped spinach, thawed, drained
- 3 green onions, thinly sliced
- 1/3 cup finely chopped red peppers
- Heat oven to 350F.
- Whisk first 6 ingredients in large bowl until well blended.
- Add remaining ingredients; mix well.
- Spoon 1-1/2 Tbsp.
- spinach mixture into each of 32 mini muffin cups sprayed with cooking spray.
- Bake 15 to 18 min.
- or until toothpick inserted in centers comes out clean.
