Viv's Raisin Pie
- 2 cups raisins
- 1 14 cups water, cold
- 12 cup orange juice
- 12 cup brown sugar
- 2 tablespoons cornstarch
- 1 teaspoon cinnamon
- 1 teaspoon orange rind
- 18 teaspoon salt
- 14 cup water
- 1 tablespoon vinegar
- 2 tablespoons butter
- 1 pie pastry, top & bottom
- Boil raisins, first amount water, and juice, for 5 minutes in a covered pot.
- Combine the following: brown sugar, cornstarch, cinnamon, orange rind, salt (dissolved in second amount of water).
- Add to cooked raisins.
- Bring to boil, stirring.
- Remove from heat.
- Add vinegar and butter.
- Pour into unbaked pie shell.
- Top with other pastry.
- Bake in hot oven (425 F) for 25 min or until done.
