Beulah's Beef Stew Recipe
- 3 lb Stew beef
- 2 lrg Onions, cut in chunks
- 4 x Carrots, 1" pcs
- 4 x ribs Celery, cut in 1/2 inch pcs
- 4 lrg Potatoes, cut in eights
- 1/2 lb String beans, cut in 1 inch lengths
- 1 1/2 c. Warm water Fat for browning
- 2 tsp Salt
- 2 Tbsp. Flour
- 1/2 tsp Pepper
- Use 5 qt Dutch oven.
- Trim and cut beef into 1 inch chunks.
- Coat in flour and brown in small pcs of fat trimmed from meat.
- Add in cut-up onion; brown 5 min longer.
- Add in warm water and salt.
- Cover pot and simmer 1 1/2 hrs.
- Add in cut-up vegetables to stew pot; carrots, celery, potatoes, string beans.
- Add in more water, if necessary, for extra gravy.
- Cook for 25 min longer or possibly till vegetables are done.Season with pepper.
- Serves 6.
