Strawberry Daifuku Made with Cut Mochi
- 2 Strawberries
- 1 Red bean paste
- 1 piece Cut mochi
- 1 heaping teaspoon Sugar
- 1 Katakuriko
- Wash the strawberries and remove stems, then wrap with red bean paste.
- Put the cut mochi in a flat bowl, and add enough hot water to cover it.
- Microwave for about 1 minute at 600 W.
- Keep 2 ~ 3 teaspoons of hot water, and drain the rest.
- Add the sugar, and mix and knead with a spoon.
- If it's not mixing well, microwave for another 20 seconds, and mix some more.
- If it needs more water, add some before microwaving.
- Divide the mochi into 2 pieces and wrap the red bean paste balls from Step 1.
- Roll them into balls while coating with katakuriko.
