Swiss Steak

  1. In a large pot, saute onions and garlic in olive oil for 3 minutes or so over medium heat.
  2. Sprinkle plenty of salt and pepper over meat and stir into the hot pot.
  3. Brown thoroughly and stir in V8, tomato sauce, more salt & pepper, thyme.
  4. Bring to a boil and reduce heat to simmer.
  5. Cook covered 2 hours and 45 minutes or until meat is tender.
  6. Taste and adjust seasonings.
  7. Lots of salt, pepper depending on your taste.
  8. Serve hot over mashed potatoes.
