Swiss Steak
- 3 tablespoons olive oil
- 1 large onion, diced
- 3 garlic cloves, minced
- 2 lbs stew meat
- 1 tablespoon ground thyme
- salt & pepper
- 36 ounces vegetable juice (V8)
- 2 (15 ounce) cans tomato sauce
- In a large pot, saute onions and garlic in olive oil for 3 minutes or so over medium heat.
- Sprinkle plenty of salt and pepper over meat and stir into the hot pot.
- Brown thoroughly and stir in V8, tomato sauce, more salt & pepper, thyme.
- Bring to a boil and reduce heat to simmer.
- Cook covered 2 hours and 45 minutes or until meat is tender.
- Taste and adjust seasonings.
- Lots of salt, pepper depending on your taste.
- Serve hot over mashed potatoes.
