Lemon Glaze

  1. Dissolve kudzu in water and apple juice.
  2. Pour into a small saucepan and bring to a slow simmer over medium heat, stirring constantly.
  3. Add lemon juice, vanilla, maple syrup and zest and continue to stir mixture several minutes.
  4. Reduce heat to low and cook 5 minutes more.
  5. Remove pan from heat and let glaze cool.
  6. Drizzle over bread pudding slices, if desired.
