Divine Cranberry-Pecan Chicken Salad
- 2 cups Cooked Rotisserie Chicken, Chopped Or Shredded
- 13 cups Dried Cranberries
- 1/4 cups Whole Pecans, Roughly Chopped
- 1/2 cups Mayonnaise
- 3 ounces, weight Plain Or Vanilla Yogurt
- 1/4 cups Sour Cream
- 18 cups Brown Sugar (Please Note This Calls For ONE-EIGHTH Of A Cup, Not One-third!)
- 3 dashes Lemon Juice
- Salt And Pepper, to taste
- In a large mixing bowl, toss together chicken, cranberries and pecan pieces.
- In a separate bowl, mix together the mayonnaise, yogurt and sour cream.
- Combine this wet mixture in with the chicken, berries and nuts.
- Fold in brown sugar, lemon juice and salt and pepper taste.
- For best results, cover and place in the fridge for at least 1/2 hour so all the flavors can marry.
- Serve on a croissant or with your favorite crackers!
