Beef With Celery Stir Fry Recipe

  1. Cut meat across the grain into thin strips, 1 1/2-inches long.
  2. Combine 1/2 Tbsp.
  3. of the soy sauce, vinegar and egg white in medium bowl; beat lightly with fork till foamy.
  4. Fold in meat.
  5. Cover and let stand 1 hour, stirring occasionally.
  6. Cut celery into 1/2-inch diagonal slices.
  7. Combine celery, 1 c. of the water and the salt in saucepan.
  8. Cook over medium high heat till boiling.
  9. Boil 3 min.
  10. Drain celery.
  11. Heat 2 Tbsp.
  12. of the oil in wok over high heat.
  13. Drain meat and add in to wok.
  14. Stir-fry till meat is brown, about 5 min.
  15. Remove meat from wok.
  16. Add in remaining 1 Tbsp.
  17. oil to wok.
  18. Add in celery, onions, ginger and garlic.
  19. Stir-fry 1 minute.
  20. Return meat to wok; mix well.
  21. Combine remaining 1/2 c. water, 1 1/2 Tbsp.
  22. soy sauce, the sherry, cornstarch and oyster sauce.
  23. Pour over meat-vegetable mix.
  24. Cook and stir till liquid boils and thickens.
  25. Makes 4 servings.
