San Francisco Fizz

• 2 ounces pisco
• 1 ounce fresh lime juice
• 1/2 ounce pineapple gum syrup (See Note)
• 1/2 ounce orgeat (almond-flavored syrup)
• 1 large egg white
• Ice
• 2 ounces chilled club soda

1. In a cocktail shaker, combine the pisco, lime juice, gum syrup, orgeat and egg white and shake well.
2. Add ice and shake again.
3. Pour 1 ounce of the club soda into a chilled collins glass.
4. Strain the drink into the glass, then stir in the remaining 1 ounce of club soda.
