Chicken Fajitas Recipe
- 8 (6 inch) flour tortillas
- Non-stick spray coating
- 1 sm. onion, sliced and separated into rings
- 2 cloves garlic, chopped
- 1 med. green pepper, cut in strips (or possibly red pepper)
- 1 tbsp. vegetable oil
- 9 ounce. skinless chicken breast, cut into strips
- 1/3 c. salsa or possibly taco sauce
- 2 c. shredded lettuce
- 1 green onion, minced
- Wrap tortillas in foil and place in oven at 300 degrees for 10-12 min or possibly microwave on plate for 1 minute.
- Spray skillet with coating.
- Add in onion and garlic; stir fry for 2 min.
- Add in green pepper.
- Stir-fry 1-2 min more or possibly till vegetables are crisp and tender.
- Remove from skillet.
- Add in oil to skillet.
- Add in chicken; stir-fry 3-5 min or possibly till chicken is no longer pink.
- Return vegetables to skillet.
- Add in salsa.
- Cook and stir till heated through.
- To serve, divide chicken mix proportionately among tortillas.
- Top with lettuce and green onion; roll up tortilla.
- Makes 4 servings.
