Orange Ginger Red Lentils

  1. In place of the OJ use another flavor, such as apple or raspberry.
  2. Use your favorite flavored vinegar in place of the rice vinegar.
  3. Combine lentils, water, carrots, orange juice concentrate, and dash of the cayenne or wasabi powder in a saucepan.
  4. Squeeze grated ginger over the lentils.
  5. Discard the pulp.
  6. Cook until lentils get soft.
  7. Stir to prevent burning.
  8. Add soymilk and cook.
  9. Lentils should be thick and mushy.
  10. Season to taste with salt and drizzle on vinegar.
