Turkey Chili
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 green bell pepper, cut in 1/2 inch squares
- 1 red bell pepper, cut in 1/2 inch squares
- 2 teaspoons chili powder
- 34 teaspoon oregano
- 34 teaspoon ground cumin
- 34 teaspoon ground coriander
- 1 lb ground turkey
- 1 (14 ounce) can chopped tomatoes
- 1 (8 ounce) can tomato sauce
- 2 tablespoons tomato paste
- 12 teaspoon salt
- 14 teaspoon black pepper
- 1 (15 ounce) can red kidney beans, drained and rinsed
- In a flameproof casserole, heat the oil over moderate heat.
- Add the onion and garlic and saute for 5 minutes or until the onion is soft.
- Add the bell peppers and saute for 5 minutes or until soft.
- Stir in the chili powder, oregano, cumin, and coriander and cook for 1 minute.
- Add the ground turkey and saute for 3 minutes or until no longer pink.
- Add the tomatoes, salt and black pepper and bring to a simmer.
- Add the beans and cook for 3 minutes or until heated through.
