Turkey and Veggie Sloppy Joes
- 1 pound Ground Turkey
- 1 Tablespoon Olive Oil
- 2 cloves Garlic - Crushed Or Chopped
- 1 whole Medium Onion, Chopped (We Like Red Onions)
- 1 whole Red Or Green Pepper, Chopped
- 1 can (14.5 Oz.) Whole Tomatoes, Zipped Through The Food Processor
- 2 Tablespoons Balsalmic Vinegar (Or Cider, Or Whatever Is In Your Cupboard)
- 2 Tablespoons Worcestershire Sauce
- 2 teaspoons Yellow Mustard
- Heat olive oil in a large skillet and add the garlic.
- Saute for about 30 seconds.
- Add the turkey, onion and pepper and cook until the turkey is browned.
- Break up the turkey into tiny pieces as it cooks.
- Add the rest of the ingredients and bring to a boil.
- Reduce heat and simmer for about 20 minutes or until most of the liquid has evaporated.
- (There might still be some, though.)
- Stir frequently and make sure to scrape the brown bits that might be stuck to the pan.
- I use a slotted spoon to put the sloppy joes onto the rolls.
