Sausage Zucchini Boats Recipe
- 1/4 pound sausage
- 4 med. sized zucchini
- 1/4 c. minced onion
- 1/2 c. grated Parmesan cheese
- 1 egg, slightly beaten
- 1/2 c. crushed cracker crumbs
- 1/2 teaspoon monosodium glutamate
- 1/4 teaspoon salt
- 1/4 teaspoon dry thyme, crushed
- Dash pepper
- Paprika
- Cook whole zucchini in boiling, salted water till tender, about 7 to 10 min.
- Cut each zucchini in half lengthwise.
- Scoop out interior of squash and mash.
- Brown sausage and onion in a heavy pan.
- Stir in mashed zucchini.
- Add in remaining ingredients except for paprika and 2 Tbsp.
- of Parmesan cheese.
- Mix well.
- Spoon into zucchini shells.
- Place shells in a shallow baking dish.
- Sprinkle Parmesan cheese and paprika on top of each squash.
- Bake at 350 degrees for 25 to 30 min.
- Serves 4 to 8.
