No Compromise Healthier Roast Potatoes
- 1 kg Potatoes
- 1 tbsp Plain Flour
- 1 Fry Light
- Wash and peel potatoes in cold water.
- Chop Potatoes into evenly sized pieces and add to a large pan.
- Add enough Boiling Water to cover the potatoes and simmer for 10 minutes.
- Turn the oven to 180C to preheat.
- Drain Potatoes and return them to the pan, off the heat.
- Sprinkle the flour over the potatoes.
- Place a lid or large plate on the pan.
- Carefully shake the Potatoes in the pan, while keeping the lid on.
- Use a tea towel to hold it on if hot.
- This should fluff up the edges of the potatoes.
- Don't over do it, or you will end up with roasted mash!
- Cover a baking tray large enough for the potatoes in cooking foil and lightly spray with Fry Light.
- Gently place the potatoes on the baking tray with plenty of space between each.
- Use a second tray if you need to.
- Spray all potatoes lightly and evenly with Fry Light.
- Add baking tray to oven and roast at 180C for 45 minutes.
- Serve immediately - roast potatoes are best fresh from the oven and don't react well to being kept warm (like a hot plate) for long.
