Haitian legumes

  1. Wash all your vegetables.
  2. Peel the eggplant skin and slice them in 1/2.
  3. With a potato peeler slightly remove the carrots skin
  4. Slice the cabbage in 4 pieces
  5. If you are using the spinach in a bag, open the bag remove any rotten spinach then rinse with cold water.
