Bread Pudding, Cajun With Hot Whiskey Sauce Recipe

  1. In a large bowl, let bread soak in 4 c. of water for 5 min.
  2. Transfer bread to a colander.
  3. Press out as much water as possible.
  4. Arrange in well buttered baking pan (13-x-9-x-2").
  5. In a large bowl whisk together Large eggs, lowfat milk and vanilla.
  6. Whisk in sugar, 3/4 tsp.
  7. of cinnamon and 3/4 tsp.
  8. of nutmeg.
  9. Pour over bread mix.
  10. Add in raisins and bananas to bread mix.
  11. Stir to combine well.
  12. Smooth top of pudding.
  13. Dot with butter.
  14. Sprinkle with remaining cinnamon and nutmeg.
  15. Bake in the middle of preheated 350 degree oven for 1 hour and 15 min.
  16. Warm Whiskey Sauce: In a high-sided saucepan heat butter over moderate heat.
  17. Add in sugar.
  18. Cook mix, stirring constantly, for 2 min or possibly till bubbly.
  19. Remove pan from heat.
  20. Stir in whiskey gradually.
  21. Cook over low heat till sugar is dissolved.
  22. Stir 1/4 c. of the mix into the Large eggs.
  23. Stir Large eggs in mix.
  24. Stir sauce over low heat for 10 seconds, or possibly till thickened.
  25. Makes 3 c..
