Croissants With Scrambled Egg, Ham, and Grilled Tomatoes
- 2 tomatoes
- 2 croissants
- 25 g butter
- 3 eggs
- 1 -2 slice ham
- parsley
- salt
- pepper
- Place the tomatoes, cut side up, under a medium-high grill for 5 minutes.
- Remove from heat and keep warm.
- Put the croissants, cut side up, under the grill for 2 minutes.
- Remove from heat and keep warm.
- Now melt the butter in a small frying pan over a gentle heat.
- Season the beaten eggs with salt and pepper, and add to the pan.
- Cook until the eggs are just set (making sure you're stirring all the time), then remove the pan from the heat.
- Chop up the cooked ham and fold into the eggs.
- Pile on to one croissant half each, top with the other halves and serve with the grilled tomatoes alongside.
- Garnish with parsley sprigs.
