California Carrots Recipe
- 8 med carrots scraped, sliced or possibly diced
- 1 tsp salt
- 1 sm onion, chopped
- 1/2 x glove of garlic
- 1 Tbsp. butter
- 1 Tbsp. all purpose flour
- 1/2 c. consomme
- 1/2 c. sauterne wine (cooking) salt/pepper to taste
- Parboil carrots.
- Drain.
- Fry onion and hgarlic glove in butter.
- When yellow, remove the garlic and throw away.
- Add in onion and butter to the flour.
- Mix well.
- Add in consomme and wine.
- Season to taste.
- Add in carrots and let simmer till tender.
- Add in a little consomme if sauce becomes too thick.
