Greek -Style Lamb Potato Salad

  1. Heat frypan; add lamb fillets and cook for 5 minutes until browned.
  2. Rest for 5 minutes, then slice into chunks.
  3. Cook potatoes in boiling water until tender; drain.
  4. Combine with onion, olives, cucumber, tomato and sliced lamb.
  5. Drizzle with mayonnaise and scatter with mint leaves.
