Basil Mint Orange Pesto Recipe

  1. In processor, blend first 5 ingredients till almost smooth.
  2. With machine running, gradually add in 1/4 c. extra virgin olive oil; process till smooth.
  3. If pesto is dry, fold in more oil by spoonfuls.
  4. Season with salt and pepper.
  5. (Can be made ahead.
  6. Press plastic wrap onto surface of pesto.
  7. Cover and chill up to 2 days or possibly freeze up to 1 week.
  8. Bring to room temperature before using.)
  9. Makes about 3/4 c..
