Deep Fried Eggplant Recipe

  1. Medium to large eggplant, cut lengthwise into pickle strips.
  2. Leave skin on.
  3. Sprinkle with salt and put a plate on top for weight.
  4. Mix batter ingredients well.
  5. Rinse salt from eggplant.
  6. Dip in batter and fry till brown.
  7. Drain on paper towel.
