Lemon Paprika Tilapia over Rice Pilaf
- 3 tablespoons Land O Lakes Butter
- 1 tablespoon freshly grated lemon zest
- 1/2 teaspoon cracked black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1 pound whole fresh tilapia fillets
- 1 tablespoon Land O Lakes Butter
- 1 small (1/2 cup) onion, chopped
- 1/4 cup chopped carrot
- 1/4 cup chopped celery
- 1/2 teaspoon salt
- 2 (10-ounce) packages frozen microwaveable white rice
- Melt 3 tablespoons butter in 12-inch nonstick skillet over medium-low heat, stirring occasionally, until sizzling.
- Stir in lemon zest, pepper, paprika and 1/4 teaspoon salt.
- Add tilapia fillets.
- Cook, turning once, 10-12 minutes or until fish flakes easily with fork and is light golden brown.
- Remove from pan.
- Keep warm.
- Melt 1 tablespoon butter in same skillet.
- Add onion, carrot, celery and 1/2 teaspoon salt.
- Cook 3-5 minutes or until onion is translucent and carrot and celery are crisply tender.
- Prepare rice according to package directions, while vegetables are cooking.
- Stir rice into cooked vegetables until combined.
- Continue cooking until heated through.
- Place rice mixture onto platter.
- Top with fish.
