Lemon Paprika Tilapia over Rice Pilaf

  1. Melt 3 tablespoons butter in 12-inch nonstick skillet over medium-low heat, stirring occasionally, until sizzling.
  2. Stir in lemon zest, pepper, paprika and 1/4 teaspoon salt.
  3. Add tilapia fillets.
  4. Cook, turning once, 10-12 minutes or until fish flakes easily with fork and is light golden brown.
  5. Remove from pan.
  6. Keep warm.
  7. Melt 1 tablespoon butter in same skillet.
  8. Add onion, carrot, celery and 1/2 teaspoon salt.
  9. Cook 3-5 minutes or until onion is translucent and carrot and celery are crisply tender.
  10. Prepare rice according to package directions, while vegetables are cooking.
  11. Stir rice into cooked vegetables until combined.
  12. Continue cooking until heated through.
  13. Place rice mixture onto platter.
  14. Top with fish.
