Bon Appetit Vegetarian Chili with Chipotle Chilies
- 1 cup carrots chopped
- 1 cup green bell peppers or red, chopped
- 1 cup onions chopped
- 3 large garlic cloves minced
- 1 tablespoon chili powder
- 2 teaspoons cumin ground
- 28 ounces italian plum (roma) tomatoes canned, with juice, chopped
- 15 ounces red kidney beans canned, drained
- 15 ounces white kidney beans, canned canned, drained, prefer cannellini
- 15 ounces black beans canned, drained
- 2 tablespoons chipotle chili peppers in adobo sauce, canned, chopped
- Cook for 30 minutes, stirring, and add salt and pepper.
