Pancake Mix Madeleines
- 100 grams Pancake mix
- 2 Eggs
- 50 grams Sugar
- 70 grams Butter (melted)
- Put the melted butter, sugar and eggs into a bowl and mix well.
- Add the pancake mix.
- Mix well.
- Pour into madeleine cups (about 70% full.)
- Bake in a 170C oven for 25 minutes.
- They'll be nice and puffy when done.
