Potato Lentil Stew
- 2 large potatoes
- 1 cup dried red lentils
- 3 cups water
- 12 cup diced tomato
- 12 teaspoon salt
- 12 teaspoon black pepper
- 12 teaspoon curry
- 12 teaspoon turmeric
- 14 teaspoon paprika
- 14 teaspoon cinnamon
- Cut potatoes into pieces that are about 1" square.
- Rinse lentils.
- Combine potatoes, red lentils, tomatoes, water, and spices in a pan.
- Cover and let simmer until all of the water is absorbed.
- Stir occasionally.
